Strawberry Oatmeal Tartlets

Warm‑weather rescue for overripe strawberries—these fibre‑rich single‑serve tartlets blend oats, banana and buttermilk for a wholesome breakfast or dessert.

Ingredients (2 small tartlets)

  • 10 fresh strawberries

  • 75 g rolled oats

  • 2 small ripe bananas (or 1 large)

  • 1 sachet vanilla sugar (≈ 8 g)

  • 150 ml buttermilk

  • 1 tsp baking powder

  • 1 egg

  • Pinch of salt

Method

  1. Pulse oats into a coarse flour.

  2. Stir in baking powder, vanilla sugar and salt.

  3. In a separate bowl, blend bananas, egg and buttermilk until smooth.

  4. Combine wet and dry mixtures.

  5. Grease two small tart moulds. Halve strawberries, place cut‑side down, then spoon batter on top.

  6. Bake at 200 °C / 390 °F for 25–35 minutes until golden. Cool slightly; serve warm or chilled.
